The Flipped Classroom

Not having enough time to complete the tasks in the shop can affect a students’ ability to comprehend the subject.

A flipped classroom is a useful tool that would allow for additional time to be spent in the shop. A flipped classroom involves assigning material to be completed by the students before the class begins. By starting the class with a prior knowledge of the subject matter, it will be easier to minimize time spent in the classroom, and delegate more time for hands-on activities.

In the traditional teaching method with culinary arts, the use is typically with textbook reading in the classroom and praticum in the lab kitchen. Students often get lost in the theory so they spend too much time figuring it out in the lab kitchen. By using the flipped classroom to teach students about stock making, for example, will involve textbook readings, and videos to be viewed before the class starts. More time will be allotted to practice performing in the lab kitchen also more time to discuss any issues in the class room.

During the time with COVID, we tried to use on line cooking school like ROUXBE for students to do prep work before the virtual class. Students came out with more questions and understanding while we were doing virtual practise.

I have tried to implement a flipped classroom ever since. When I was an apprentice, I always felt that there wasn’t enough time to fully immerse myself in lab kitchen activities. I hope to change that for my future students' benefits.
